Tasty Al Fresco Chicken Meatball Pasta Dinner

I made a new recipe for dinner tonight from
It is the Linguini with Roasted Vegetables and Tomatos Basil Chicken Meatballs recipe. If you don't eat meat like me, this is still an excellent recipe to make by leaving out of the chicken meatballs.

The Al Fresco recipe calls for tomato and basil chicken meatballs, however, I was unable to find that variety at the grocery store. You can simply use a variety of your choice or what you have on hand.

The only changes I made to the recipe was to substitute steamed broccoli for roasted asparagus because I didn't have asparagus at home but really wanted to make this for dinner.

I used a basil infused olive oil instead of plain and added some garlic and onion seasoning while it was sauteing in the pan.

We eat a lot of pasta in our home, this is a great recipe to help mix it up, yet easy to make. This is a keeper for sure.
